Lemonato Kotopoulo (Lemon Chicken)

Ingredients
- 4 chicken thighs (or chicken breasts)
- 2 large lemons, juiced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- salt and pepper to taste
- fresh rosemary sprigs (optional)
- 1/2 cup chicken broth or water
Instructions
- Marinate the Chicken (10 minutes): In a bowl, whisk together the lemon juice, minced garlic, olive oil, oregano, thyme, salt, and pepper. Add the chicken pieces and coat them evenly with the marinade. Let the chicken marinate for at least 10 minutes, or up to 2 hours in the refrigerator for more flavor.
- Prepare for Baking (5 minutes): Preheat your oven to 180ยฐC (350ยฐF). Place the marinated chicken in a baking dish. Pour the chicken broth or water around the chicken to keep it moist while cooking. Add rosemary sprigs if using.
- Bake the Chicken (1 hour): Bake in the preheated oven for about 1 hour, or until the chicken is golden and cooked through, with an internal temperature of 75ยฐC (165ยฐF). Baste the chicken with the pan juices halfway through cooking.
- Serve: Once the chicken is done, remove it from the oven and let it rest for a few minutes. Serve with the pan juices drizzled on top, along with a side of roasted potatoes or a Greek salad.
