Ingredients
  

  • 4 medium zucchinis grated
  • 200 g feta cheese crumbled
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 eggs
  • 1/2 cup fresh dill finely chopped
  • 1/4 cup fresh mint finely chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • salt and pepper to taste

Instructions
 

  • Prepare the Zucchini (10 minutes): Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess water as possible to prevent soggy fritters.
  • Mix Ingredients (5 minutes): In a large bowl, combine the grated zucchini, crumbled feta cheese, chopped onion, minced garlic, eggs, dill, mint, flour, and breadcrumbs. Mix well until evenly combined. Season with salt and pepper, keeping in mind that feta adds saltiness.
  • Form the Fritters (5 minutes): Shape the mixture into small patties about the size of a golf ball and flatten slightly to form fritters. If the mixture is too wet, adjust by adding more flour or breadcrumbs.
  • Fry the Fritters (15 minutes): Heat olive oil in a large frying pan over medium heat. Once the oil is hot, fry the fritters in batches, about 3-4 minutes per side, until golden brown and crispy. Avoid overcrowding the pan.
  • Drain and Serve (5 minutes): Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Serve hot with a side of tzatziki or plain yogurt for dipping.
